Indian Zucchini



we have ZUCCHINI for days! from Mikeys brother TOMASSO’S garden. Is that how you spell his name?
Maybe one day i can call him that to his face? Mike says NO. Such a loving, loud, proud and food centric Italian family i have been lucky enough to know.

but tonight is Indian!

3 tablespoons vegetable oil
1 teaspoon mustard seeds
1 small onion, diced
1 1/2 pounds zucchini cut into 1/2-inch dice
1/2 teaspoon cumin
1/8 teaspoon turmeric
1/8 teaspoon cayenne pepper
1 teaspoon salt
Chopped cilantro, for garnish (optional)

served with roasted baby potatoes covered in rosemary, thyme, red pepper flake, s&p, olive oil. baked for 40 mins.
then fish is thrown in the middle and we baked that for 10 minutes longer. douse with LEMONS. PRESTO. ((wave hands in air Italian style))
