MASHED YUCCA

what a beautiful freakkking root! it was our favorite part of our meal….and it was the easiest thing to make. you could eat it plain and not use any of the ingredients below.

you can eyeball this recipe easily ….just taste it as you go

  • 4 lb fresh yuca
  • 1 3/4 to 2 1/4 cups hot milk
  • 2 garlic cloves, minced
  • 1 tablespoon fresh lime juice
  • 2 teaspoons salt

use a knife or peeler to take the skin off. cut it every few inches to make round disc shaped pieces that are about 3 inches wide. boil it for about 50-60 minutes. strain it and then cut out the “WOODY BONE” in the middle. add milk, garlic, lime and salt.
