PORK SHOULDER / CARNITAS

Mikes BFFE Jay taught us how to make pork butt! He kindly made it for us a few weeks ago and we kept going back for seconds and thirds.  I’ve never ordered a pork butt at a counter either so it was pretty awesome to ask for it at the butcher near our house.

We set the pork and went hiking all day– 7 miles & 3.5 hours later- we came back to the house smelling amazzzzing. We also made cuban beans and rice. Should’ve added some avocado, salsa, put it on an arepa or on a tortilla. Will tweak recipe next time.

NEED:

4 lbs of deboned pork butt

2 Oranges

1tbsp orange zest

2 tsp cumin

1 tbsp oregano

1 tbsp olive oil

2 tbsp salt

1 tsp black pepper

1 onion chopped up about 8 times.

5 garlic cloves roughly chopped

1 chopped jalapeno- keep a few seeds if you want spicy

In bowl:
cumin, oregano,  olive oil

Mix in another bowl:
salt, black pepper

Rinse and dry pork shoulder
Put it in crock pot
Rub it with s&p
Rub the olive oil Mix
Zest half an orange about 1 tbsp onto it
Juice of 2 Oranges in cooker.
Add onion
garlic cloves
Add Jalepeno

Cook on Low setting for 8-10 hours
or High 6 hours
