Scallion Pancakes

holy crap! We made these. I had never had them before until Michael introduced me.

We got this from a Cooks magazine. So you know this will be good.

 

NOTE: this has a 30min rest time before making

NEED:

1.5 cups flour

1 tsp salt

.5 cup water room temperature

1/4 cup vegetable oil

2 tsp toasted sesame oil

6 scallions minced – only like 3 scallions really we bought a bunch but it was too many!!

2 tbsp minced cilantro

Serve with : soy sauce or hoisin sauce

DO:

whisk flour and salt together in medium bowl. Add .5c water and mix with fork until combined. If there’s extra flour bits at the bottom add 1tsp of water at a time.

Put dough on floured counter and knead until smooth and saying about 5 minutes (it goes fast). you can add more flour to your hands if it’s sticky. Then put dough in clean dry bowl. Brush with a layer of vegetable oil and let rest for 30mins.

In the meantime make 4 small bowls with 2 tbsp scallions and 1.5 tbsp cilantro in each.

Divide dough into 4 pieces and cover with plastic wrap so it won’t dry out! Roll piece into 7″ circle about 1/8″ thick on a floured surface. Brush dough round lightly with sesame oil then sprinkle with about 2 tbsp scallions and 1.5 tbsp cilantro.

Roll dough up into a cylinder brushing away any clumps of flour stuck on the dough. Then Coil cylinder into a round shape and tucking the tail end underneath. Use rolling pin and Roll round into 5″ circle about 1/4″ thick. Use flour if it’s sticking. Set aside and cover with plastic. Repeat with the other dough balls.

Heat 1tbsp oil vegetable oil over med high heat until shimmering. Add dough round and cook til golden brown about 1.5min to 2min per side.
